I was looking through some recipes for this,
and they all sounded good, so I took a little of this one
and a little of that one and came up with this....
hope you like it!!!


Ritis Cauliflower Casserole

1 medium sized head cauliflower,
(broken up into bite sized pieces)
1 cup milk
2 tbls flour
2 tbls butter or margaine
1/2 tsp salt (optional)
pepper to taste, (try white pepper for this!)
1/2 cup mozzarella cheese, finely grated
2 tbls parmesan cheese, finely grated
2 tbls cracker crumbs

Steam cauliflower until almost tender, about 5 minutes,
place in greased (I grease with margarine for this dish) casserole dish.
Combine milk, butter or margarine and flour in a small sauce pan,
over med heat, stirring until smooth, add salt and pepper and cheeses.
Stir until cheese is melted.
Pour over cauliflower.
Sprinkle with cracker crumbs and bake in preheated 350 oven
about 1/2 hour or until bubbly and golden brown....makes about 6 servings.
