Tangy and tasty, It won't last long!! Ritis Potatoe Salad8 to 10 large russet potatoes, peeled, and diced 3 stalks Celery, diced 1 med Sweet Onion, diced 6 Radishes, diced 2 tbls Chives 1 1/2 cup Lite Miracle Whip® Salad Dressing (more or less for taste and creaminess desired) 1 tbls Curry Powder, a dash more or less to taste 1 tsp Paprika 1 1/2 tsp White Pepper, again more or less to taste Salt to taste 2 hard boiled eggs for garnish, optional Paprika for garnish, optional Cook potatoes in salted water (I add a dash or 2 of garlic powder to the water, but up to you!!), until done but still firm (try the fork test, fork should pierce almost through, but not break, about 12 to 15 minutes) don't over cook, or potatoes will be mushy! Drain and cool. In large bowl,combine potatoes with vegetables, salad dressing and spices, mix well. Top with eggs and paprika. Chill at least 3 hrs...Yumm!!!
