California Chicken
1 package boneless/skinless Chicken breast
1/4 C Vegetable oil
1 Bell pepper, diced
1 Yellow pepper, diced
1 Medium onion, diced
1 C Mushrooms, sliced
Seasonings:
1 Tsp Lemon pepper
1 Tsp Paprika
1 Tsp Basil
1 Tsp Italian seasoning
Salt & pepper to taste
Preheat a medium skillet to medium heat with oil.
Place vegetables and seasonings in skillet and saute until tender.
Add chicken to the vegetables and brown until done.
Chicken is done when a fork can be easily inserted and removed and the juices run clear.
Serve on a bed of rice or fresh pasta.
