Baked Macaroni and Cheese

water
salt
8-ounces elbow macaroni
4 tblsp. butter
1/4 cup brad crumbs
1 small onion, minced

1 tblsp. all-purpose flour
1/4 tsp. dry mustard
1/8 tsp. pepper
1 1/2 cups milk
2 cups shredded cheddar cheese

1- Boil 3 quarts of water and 1 tsp. of salt. Add macaroni; cook until tender but firm; drain.
2- Grease 2 quart baking dish. Preheat oven to 350 degrees.
3- In saucepan over medium heat, melt 2 tblsp. butter; add bread crumbs and toss to coat; set aside
4- In another saucepan over medium heat, melt remaining butter; add onions and cook until tender, about 5 minutes.
5- Blend in flour, mustard, pepper and salt. Slowly stir in milk; cook stirring, until thickened. Remove from heat and stir in cheese.
6- Place macaroni in greased baking dish. Pour cheese mixture over macaroni. Sprinkle with bread crumbs and bake in oven for 20 minutes.
