Broiled Lemon Chicken w/ Tomatoes
1/2 cup butter or margarine
1/4 cup lemon juice
1 tsp salt
1 tsp sugar
1/4 tsp pepper
1 3-4 lb. broiler-fryer cut up
4 medium tomatoes
2 tsps. grated lemon peel (optional)
2 tsps. chopped parsley or cilantro.

1- Preheat broiler. In 1-qrt. saucepan over low heat, heat butter, lemon juice, salt, sugar and pepper until butter is melted.
2- Place chicken, skin side down, on large broiling pan; broil 20 minutes.
3- Baste with butter mixture frequently to moisten and add flavor to chicken pieces.
4- Meanwhile, cut tomatoes into 6 wedges about 3/4 of the way through, gently spreading tomato wedges apart.
5- Turn chicken pieces. Arrange tomatoes on same broiling pan.
6- Broil 15-20 minutes more until chicken juices flow clear, basting chicken and tomatoes frequently with butter mixture.
7- Transfer to warm platter and sprinkle chicken with lemon peel and parsley.
