Chili con Carne

1 lb. lean ground beef
1 large onion, chopped
2-3 cloves garlic, minced
1 1/2 tblsp. chili powder
1 tsp. ground cumin
1 tsp dried oregano
1 tsp. soy sauce
1/2 tsp. paprika
1 tsp. salt
1 bay leaf

1 tsp. salt
1/2 tsp pepper
1/8 tsp. dry mustard
1 14-16 oz. can, diced tomato
1 8-oz. can tomato sauce
1 can red kidney beans
minced onion and shredded cheddar cheese for garnish

1- In medium dutch oven, cook and stir ground beef, onions and garlic until beef is brown and onions are tender; drain excess fat.
2- Stir in remaining ingredients except for beans and garnish items.
3- Bring to a boil, cover and cook on low heat for about 20-25 minutes; stirring occasionally.
4- Add beans with liquid and cook for an additional 15 minutes on low heat.
5- Serve over spaghetti or by itself in a deep bowl. Garnish with a sprinkle of minced onion and cheddar cheese.
