Chicken å la King
6 tbls. butter
1/2 lb. mushrooms, sliced
1/4 cup green pepper, diced
6 tbls. all-purpose flour
3 cups half-and-half
3 egg yolks
4 cups cubed, cooked chicken or turkey

1 4 oz. jar diced pimentos, drained
hot sauce
3 tbls. medium sherry
8 Peppridge Farm©, pastry shells
Salt and pepper to taste

1- Preheat oven and bake pastry shells as directed on package.
2- Meanwhile, in 10-in. skillet over medium heat, in hot butter, cook mushrooms and green pepper 5 minutes or until tender.
3- Stir in flour until blended. Gradually stir in half-and-half and cook, stirring constantly, until thickened.
4- Add chicken and pimentos. Heat to boiling, stirring often. Reduce heat to low. Cover and cook 5 minutes.
5- In cup, stir yolks until mixed. Stir in a little hot sauce; slowly pour mixture back into sauce, stirring rapidly to prevent lumping. Cook, stirring, until thickened.
6- Stir in sherry , salt and pepper and spoon the chicken mixture into baked pastry shells.
