Batter Fried Fish

1 lb. of fresh flounder, sole or other fillets
vegetable oil for frying
3/4 cup of all-purpose flour
2/3 cup water
1 tsp. double acting baking powder

1 tsp salt
lemon wedges
Tartar sauce (optional)

1- Rinse off fillets and pat dry with paper towels. In 12 inch skillet or deep fryer heat about 1 inch of oil to 370 degrees.
2- Meanwhile in medium bowl, mix flour, water, baking powder and salt, then using tongs, coat fillets with flour mixture.
3- Fry fish in hot oil until golden brown, about 4-8 minutes, carefully turning fillets once.
4- When cooked, remove fillets and drain on paper towels. Serve with Tarter sauce and lemon wedges.
