Garlic Chicken

1 3lb broiler fryer chicken, cut into serving pieces
1 whole head of garlic, peeled and cut in half's
2 tblsp. softened butter
1/2 tblsp. olive oil
1/2 tsp. paprika
1/2 tsp. oregano
1/2 tsp marjoram

1 tblsp. lemon juice
1 1/2 tblsp. honey bar-b-que sauce
dash hot sauce
1 tsp. salt
1/4 tsp. pepper
4 celery stalks, sliced

1- Preheat oven to 325 degrees F.
2- Place chicken pieces, skin side down, in a single layer in baking pan.
3- In medium sized bowl, combine all remaining ingredients; mix thoroughly.
4- Pour half the mixture over chicken pieces; cover loosely with foil and bake for 45 minutes.
5- Remove foil; turn pieces over and pour remaining mixture over chicken; bake, uncovered for an additional 30 minutes or until juices of chicken run clear when pierced with fork.

* It’s a good idea to line the pan with foil before cooking so that clean up will be easier.
** You can try this dish using both a whole chicken uncut or a full chicken breast and it comes out just as good. If you do a whole chicken put the mixture inside the cavity of the chicken as well as on the outside.
