Split Pea Soup

1 ham bone with about a 1/2 cup of meat on it.
1 16-oz. package split peas
2 carrot, thinly sliced
1 medium onion, chopped

7 cups water
1/4 tsp. whole or ground allspice
1/4 tsp. peppercorns
1 Bay leaf
salt and pepper to taste

1- In 5-qrt. ducth oven over medium heat,heat bone, spit peas, carrots, onions and water to a boil.
2- Tie allspice, peppercorns and bay leaf i a piece of cheesecloth. add to water mixture.
3- Reduce heat to low; cover; simmer 1 hour. Discard spice bag; add salt to taste.
4- Remove bone to cutting board. Cut off meat and dicard bone.
5- Cut meat into 1/2 in. pieces and return to soup; serve with melba toast or bread sticks.
