Skillet Pork Chops

4- 6 pork chops any cut, 3/4 to 1 inch thick
1/2 tsp. salt
1/4 tsp pepper

1/2 cup chicken broth, or semisweet dry white wine

1- Trim a piece of fat from the edge of one of the chops. In large skillet over medium heat, rub fat over bottom of skillet to grase; discard fat.
2- Add the chops to the skillet; cook until browned on both sides, Sprinkle chops with salt and pepper.
3- Add cchicken broth; reduce heat to low, cover and simmer 45 minutes. Skim fat from pan liquid and spoon over chops.


*Variations
Apple; Substitute 1/2 cup apple juice for chicken broth, and use 3/4 tsp. salt. Top each chop with1thick slice, cooking apple.
Tomato-Thyme; Add 1/8 tsp. thyme leaves crushed with water. During last five minutes of cooking top each chop with a thick slice of tomato; sprinkle with lemon juice and salt.
