Our Christmas Recipes
1. Cookies are a signature food of Christmas!!

2. Cookie Baking Tips
~~~ Only bake ONE tray of cookies at a time. If you rush and crowd the oven, none of the cookies will get even heat and you'll have an unsavory mixed of burnt and half cooked cookies.
~~~ Place cookies on the MIDDLE rack of the oven to get the most even heat.
~~~ To check your cookies carefully pull up a corner of one of the cookies and check if it is browned on the bottom. Sometimes the cookies will appear as if they aren't done, on the top, but if the bottom is brown, they are done.
~~~ If you see in a recipe that the dough requires refridgeration before handling, do as the recipe says and get that dough in the fridge!
~~~ Have at least two cookie sheets: while one is baking, put a batch of cookies on the other cookie sheet. After you take out the first bunch, put in a fresh bunch into the oven. Remove baked cookies onto a plate or drying rack and let cookie sheet COOL before putting more cookie dough on it. Putting dough on a warm cookie sheet is asking for trouble. ( no the baking fairy will not come and bop you, you'll just have runny or unevenly baked cookies)
Pineapple Clove Glazed Ham
![]()
1 large smoked ham ( or small ham, or medium sized)
(I try to pick one without a lot of fat, and has a bone I can later use for soup)
1 cup unsweetened pineapple juice
1 small can pineapple rings (reserve juice) ( If you don't have rings don't substitute any other kind of pineapple. Trust me it doesn't work. Go rings or none)
1/2 cup water
a handful of whole cloves
place ham in roaster with a lid
pointy tooth picks
With a sharp knife score the ham with small[[ slits]]
(some cooks like to score the whole ham in diamond shapes.It sure looks pretty , but I personally found that it made the ham less juicy. Okay, so I cut myself a couple times and decided against the diamond thing. Both are true. You decide ) Into each slit poke a clove stem
Lay pineapple rings all over top of ham, skewer into place with those pointy toothpicks
Pour CUP pineapple juice over the top of the ham
Pour 1/2 cup water in bottom of pan,
around the ham COVER roaster and place in 350 degree oven for one hour Baste ham with drippings, or if the ham seems dry , or there is little liquid on the bottom of the pan, mix remaining juice and water carefully over top of ham. Place ham back in oven, bake 1 more hour.
The internet is [[ glutted ]] with recipes for everything you can thing ( and some you can't) I enjoyed checking out some other recipes for glazed ham that you might want to experiment with ( if you experiment and it turns out bad , don't blame me)
Sandy's Old-time Snow Cream Recipe
Basic Recipe
1 cup milk
1/2 cup sugar
scant 1/2 teaspoon vanilla
large bowl of snow (about 3 quarts)
Blend milk, sugar and vanilla.
Stir in enough snow to make snow cream to
an ice cream consistency.
Variations - There are many variations for snow cream.
For example,
substitute canned cream for milk for a heavier flavor.
Add Nestles Quik
for a chocolate snow
cream, or use instant cocoa mix.
Another variation is to add plump
raisins and cinnamon, or add a beaten egg for a nog taste.
Puree an
overripe banana and add to
the mixture.
Get creative - you know your family's tastes.
Note: ALWAYS - ALWAYS make sure the snow is clean. It takes at least one
to two hours for snow to clean the pollutants from the air, then use
only snow that
has fallen after that first cleansing snow. It also goes without saying
(but I will anyway), to make sure you do not collect the snow where
animals and birds eat (or do
other things). Cleanliness first. Stress that with the kids, because
this is a treat even the younger ones can make for the whole family.
