Apple Cornmeal Muffins

3 Points Per Serving



1 1/4 cups skim milk
1 cup all-purpose flour
1/2 tsp baking soda
1/4 cup honey
1 egg white
3/4 cup cornmeal
2 tsp baking powder
3/4 tsp salt
2 Tbsp vegetable oil
1 large apple, peeled, cored & diced

Preheat oven to 400 degrees. Spray a 12-cup muffin tin with nonstick cooking spray. In a large bowl, combine milk and cornmeal; let stand 10 minutes. In a medium bowl, combine flour, baking powder, baking soda and salt. Whisk the honey, oil and egg white into the cornmeal mixture. Stir in the apple and flour mixture until combined; do not overmix. Spoon the batter into the muffin cups, filling each about two-thirds full. Bake for 15-18 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for 5 minutes. Remove the muffins from the pan; serve warm or at room temperature.

Yield: 12 servings.
