The Best Apple Squares
3 cups flour
1 cup shortening
3 egg yolks
1 1/2 Tbsp lemon juice
1/3 cup cold water
Combine flour; cut in shortening with pastry blender till mixture is crumbly. Bend yolks with lemon juice and cold water into flour mixture. Divide mixture into 2 equal parts. Set
aside 1 part. Roll other part to fit bottom and 1/2 way upside of a 9"x12"x2" baking pan.
FILLING:
4-6 baking apples, pared, cored and sliced thin
1 cup sugar
2 Tbsp flour
1 tsp cinnamon
Dot of butter
Combine apples with sugar, flour, cinnamon and sprinkle over bottom layer of dough in pan. Dot with butter. Roll out remaining dough to fit on top of pan. Fold down sides and
seal. Make a few slashes in top of dough.
Bake at preheated 400* degree oven for 30 - 40 minutes
Glaze:
1/2 cup powdered sugar
1 Tbsp butter
1/2 tsp vanilla
1 Tbsp milk
Combine ingredients until smooth and drizzle over warm pastry. Slice into squares and serve.
