Chili-Cheese Corn Fritters
This is actually a Weight Watchers recipe...but hold on to your hats... it is "The bomb" as my youngest son says. It just so happens to be another one of his favorites. For those interested I'll add the exchange and nutrition information at the bottom.
Makes 4 servings, 3 fritters each
6oz cheddar cheese, shredded
1 cup drained canned whole-kernel corn
2 eggs
1/3 cup + 2 tsp. plain dried bread crumbs
1/4 tsp. each garlic powder, onion powder, chili powder, and double-acting baking powder
1/8 tsp. each salt and ground red pepper
2 Tbls. vegetable oil
In 1-quart mixing bowl combine all ingredients except oil; let stand a few minutes for flavors to blend.
In 10-inch nonstick skillet heat oil over medium heat until hot but not smoking; spoon corn mixture into skillet, forming 6 equal fritters. Using the back of a spoon, press top of
each fritter to flatten slightly; cook until browned on bottom. Turn fritters over and cook until browned on other side.

Each serving provides: 2 Protein Exchanges; 1 Bread Exchange; 1 1/2 Fat Exchanges Per serving: 349 calories; 16 g protein; 25 g fat; 17 g carbohydrate; 561 mg sodium; 182 mg cholesterol.
