Pastel Clouds Cupcakes
These were fun to make for or with my boys when they were little. Especially good for those moms that take cupcakes to school on birthdays. Be creative.
1 pkg. white cake mix (for those of you inclinded to bake from scratch, like me, I have included a "Silver White Cake" recipe.)
1 pkg. (3oz.) Jello, any flavor
1/4 cup boiling water
6 Tbsp. butter
3 cups confectioners sugar
Prepare cake mix as directed on pkg. for cupcakes, adding 1/2 pkg. gellatin before beating.
Cool 10 minutes in pans. Remove from pans, cool on racks.
Dissolve remaining gellatin in boiling water.
Cream butter; add part of the sugar gradually, blending after each addition.
Add remaining sugar alternately with gellatin mixture, beating until smooth. Spread on cupcakes.
YIELD: 2-2 1/2 dozen cupcakes and 1 3/4 cups frosting.
Silver White Cake:
2 1/4 cups cake flour or 2 cups all-purpose flour
1 1/2 cups sugar
3 1/2 tsp. baking powder
1 tsp. salt
1/2 cup shortening
1 cup milk
1 tsp. vanilla
4 egg whites (1/2 cup)
Heat oven to 350*F. Grease and flour baking pan, 13x9x2 inches, or 2 round layer pans, 8 or 9x1 1/2 inches. Measure flour, sugar, baking powder, salt, shortening, 2/3 cup of the milk and the vanilla into large mixer bowl. Blend 1/2 minute on low peed, scraping bowl constantly. Beat 2 minutes high speed, scraping bowl occasionally. Add remaining milk and the egg whites; beat 2 minutes high speed, scraping bowl occasionally. Pour into pan(s).
Bake oblong 35 to 40 minutes, layers 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool.
NOTE: For cupcakes, pour batter into paper-lined muffin cups, filling each 1/2 full. Bake 20 minutes.
YIELD: 2 dozen cupcakes.
