Apple Fritters
1 3/4 cups whole wheat flour
3 tsp baking powder
1/2 tsp salt
1 egg, lightly beaten
1 cup milk
1 Tbsp honey
1 oil
8 to 10 small apples, peeled, cored and chopped
Oil for deep frying

1. Mix together the flour, baking powder and salt.
2. Beat together the egg, milk, honey and oil. Pour into the dry ingredients and stir to mix. Stir in the apples.
3. Drop Tbsp of the apple batter into the deep oil heated to 365* to 375* degrees. Turn fritters as they rise to the surface, and fry until golden brown.
4. Drain on paper towels and dredge in sugar. Serve hot.
Yield: 6 to 8 servings
