Grandma's Jam Cake
1 cup butter
1 1/2 cups blackberry jam or jelly
1 1/2 cups sugar
3 cups flour
1 tsp baking soda
1/4 tsp salt
1 cup buttermilk
1 tps cloves
1 tsp nutmeg
1 tsp cinnamon
3 eggs
Cream butter and sugar, add eggs and blackberry jam. Beat thoroughly. Sift the flour, measure and resift with soda, salt and spices. Add alternately with milk to the first mixture. Beat well. Pour into well greased tube cake pan. Bake at 350* for about 55 minutes. Use caramel frosting when cake has cooled.
Quick Caramel Frosting:
1/2 cup butter or margarine
1/2 cup brown sugar, packed
1 3/4 cups confectioners' sugar
1/2 cup milk
Melt butter. Add brown sugar. Boil 2 minutes. Add milk. Stir until it boils. Remove from heat. Cool. Add confectioners' sugar and beat until it has spreading consistancy.
