Moist Bran Muffins



2 cups All-Bran
1 cup plain fat-free yogurt
2/3 cup unsweetened applesauce
1/2 cup fat-free milk
1/2 cup egg substitute
1/3 cup packed brown sugar
2 Tbsp molasses
1 Tbsp canola oil
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt

In a bowl, combine the bran, yogurt, applesauce and milk; let stand for 5 minutes. Add egg substitute, brown sugar, molasses, oil and vanilla; mix well. In another bowl, combine the dry ingredients. Stir in bran mixture just until moistened.

Fill muffin cups coated with nonstick cooking spray two-thirds full. Bake at 400 degrees for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

Yield: About 1 1/2 dozen
