Meat & Potato Quiche
This recipe is for those REAL MEN who don't think they like quiche because they have to have their meat & potatoes.
Preheat oven to 425*F
In 9" pie pan, stir together:
3 Tbsp. vegetable oil
3 cups coarsely shredded raw potatoes
Press evenly into pie crust shape. Bake at 425*F for 15 minutes until just begining to brown. Remove from oven.
Layer on:
1 cup grated Swiss or Cheddar cheese
3/4 cup cooked diced chicken, ham, browned sausage or browned hamburger.
1/4 cup chopped onion
In a bowl, beat together:
1 cup evaporated milk or half-n-half
4 eggs
1/2 tsp. salt
1/8 tsp. pepper
Pour egg mixture onto other ingredients. Sprinkle with 1 Tbsp. parsley flakes.
Return to oven and bake at 425*F about 30 minutes or until lightly browned and knife inserted 1" from edge comes out clean. Allow to cool 5 minutes before cutting into wedges.
YIELD: 4 to 5 servings.
