Mediterranean Chicken
4 Points Per Serving
4 boneless, skinless, chicken breasts
Large bottled salsa (chunky)
1 Tbsp honey
2 Tbsp raisins
1 1/2 tsp ground cumin
Mix bottled salsa, honey, raisins and cumin. Brown chicken in large frying pan with non-stick spray (add a little chicken broth if pan becomes too dry while browning chicken).
Once chicken is browned, add salsa mix and cover. Simmer for 25 minutes, until breasts are cooked through. Really great with a little steamed rice.
Yield: 4 servings.
