Pecan Peach Muffins



Topping (recipe follows)
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
2 tsp baking powder
1 tsp ground cinnamon
1/4 tsp salt
1/2 cup butter, melted
1/4 cup milk
1 egg
2 medium peaches, peeled and diced (about 1 cup)

Preheat oven to 400 degrees F. Paper-line 12 (2 1/2-inch) muffin cups. Prepare Topping; set aside.

Combine flour, granulated sugar, baking powder, cinnamon and salt in large bowl. Combine butter, milk and egg in small bowl until blended; stir into flour mixture just until moistened. Fold in peaches. Spoon evenly into prepared muffin cups. Sprinkle Topping over tops of muffins.

Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. Remove from pan.

Makes 12 muffins

Topping:
Combine 1/2 cup chopped pecans, 1/3 cup packed brown sugar, 1/4 cup all-purpose flour and 1 tsp ground cinnamon in small bowl. Add 2 Tbsp melted butter, stirring until mixture is crumbly.
