Sweet and Sour Sesame Chicken
3 lbs chicken cut up
1/4c plum sauce
1T vinegar
2c chicken stock
1/3c dry sherry
1T fresh ginger
1 onion, quartered
6 oz straw mushrooms, canned
2 stalks celery, sliced
8 oz water chestnuts, canned
8 oz bamboo shoots, canned
3 T cornstarch blended with water
1T sesame seeds
Preheat oven to 350. Arrange chicken in an ovenproof dish. Combine plum sauce, vinegar, stock, sherry and ginger and pour over chicken.
Cover and bake 40 mins.
Add vegetables, return to oven and cook another 15 mins.
Remove chicken and vegetables to a heated serving dish.
Thicken remaining liquid with blended cornstarch and water.
Bring to a boil and simmer 2 mins. Pour over chicken. Sprinkle with sesame seeds and serve with hot rice.
