Shrimp Creole

4 Points Per Serving



1 Tbsp butter
1 onion, chopped
2 cloves garlic, minced
3 bell peppers, assorted colors such as green yellow and orange, cut into 1" pieces
1 can (28oz) canned tomatoes
2 tsp Old Bay seasoning
1 tsp Italian seasoning
1 lb cooked shrimp
Hot cooked rice
Oregano and thyme sprigs, optional

In skillet melt butter over medium heat. Add onion and garlic; cook until tender, 8-10 minutes. Add peppers; cook until crisptender, 5-8 minutes. Add tomatoes, and Old Bay and Italian seasonings. Bring to a boil, breaking up tomatoes with a wooden spoon. Reduce heat to medium-low; simmer 5 minutes. Add shrimp; cook until heated through, 2-3 minutes. Serve over rice. Garnish with oregano and thyme sprigs, if desired.
