Recipe of the Month
Welcome to my recipe of the month
page. Each month I'll feature one
of my favorite recipes. I'll try to make the
recipe according to the season or a holiday.
Some months I may add more than one.
This
months featured recipe is "Blarney Stone
Bars"
3 egg yolks
1 cup
sugar
1 teaspoon vanilla
1 cup
flour
1 teaspoon baking powder
½ cup
boiling water
4 egg whites, stiffly
beaten
1 cup finely chopped
peanuts
ICING:
2 cups sifted
confectioner's sugar
6 tablespoons butter,
melted
1 egg yolk
1 tablespoon milk OR
as needed.
Beat egg yolks. Add
sugar and vanilla, beating until thick and
lemon-colored. Stir together flour and baking
powder; stir into yolk mixture. Add boiling
water; mix well. Fold in stiffly beaten egg
white. Spread into greased, 15- x 10- x 1-in
jelly roll pan. Bake 350° for 20 minutes.
Cool. ICING: Combine confectioner's sugar,
buttr and egg yolk. Add milk to reach
spreading consistency. Spread over bars;
sprinkle with finely chopped peanuts. Cut
diagonally into 3 dozen bars.
