quart sweet apple cider

whole allspice

whole cloves

stick cinnamon

tsp. honey

cup light brown sugar
dash
of salt
Pour
cider into 3-quart sauce pan. Add the spices,honey, sugar
and salt. Cover and heat slowly over a very low temperature
to boiling point. Heat should be so low that it takes
the cider about anhalf hour to come to a boil. Re-move
from heat, strain and serve steaming hot in your favorite mug!

medium red delicious apples
juice
of one lemon

cup sliced pecans

cup raisins

cup mayonnaise

Wash
but do not peel apples. Core and dice into 1/2 inch cubes. To preventdiscoloration,
sprinkle apples
with lemon juice. Combine with celery,
pecans, raisins and mayonnaise. Serve on lettuce leaves.

large granny smith apples

9 inch pie crust shell

cup flour
1/4
cup light brown sugar

cup cold butter
Preheat
oven to 400 degrees. Mix sugar,
nutmeg, and cinnamon. Peel, core and s
lice apples. Toss apples with sugar
and spice mixture and fill pie crust.
Mix flour and brown sugar together.
With a fork or pastry blender, cut in
butter until crumbly. Sprinkle over
top of apples. Bake pie for 50 minutes.
Check pie after 40 minutes, if crust is
getting too dark, cover edge with
foil for the final 10 minutes of baking.

Fritters

separated

cup water

tbls vegetable oil

cup sifted flour
vegetable
oil for frying

granny smith apples
confectioner's
sugar
Beat
egg yolk with water, oil and salt.
Add flour and beat until smooth Let s
tand at room temperature for about an
hour. Preheat oil in in deep fryer to 375
degrees. Peel and core apples, then
cut into 1/4" rings. Beat egg white until
stiff, fold into batter. Dip apple slices
into batter. Deep fry, turning once,
until golden brown. Drain on paper
towels. Dust with sugar before serving.

Pancakes

cups "complete pancake mix

cup water

cup chunky cinnamon applesauce
Preheat
griddle to 375 degrees. Combine
pancake mix, water and applesauce i
n bowl. Stir just until large lumps
disappear. Lightly brush griddle with
vegetable oil. Pour about 1/4 cup b
atter onto the griddle for each pancake.
Cook about 1 minute or until bubbles b
reak on top of the pancake. Flip pancake
and cook an additional minute or until brown.

baking apples, partially cored leaving bottom intact

cup sugar

cup light brown sugar

grated
rind of 1 lemon

cup raisins

cup apple juice

tbs. butter
Preheat
oven to 375 degrees. Stand
apples side by side in a shallow baking
dish. In bowl, combine sugars, spices
to bowl and mix. Fill cored apples with
raisin mixture. Sprinkle any remaining
mixture over apples. Pour juice in baking
dish. Dot each apple with 1/2 tbs. butter.
Bake forand salt. Add lemon rind and raisins
35-45 minutes. Baste a few times during the baking process.
Orange-Pecan Baked Apples
6 medium baking apples, cored
1/4 cup orange marmalade
2 tbs finely chopped pecans
Ground cinnamon
Ground nutmeg
Place apples in a shallow baking dish; add water to cover bottom of
dish.
Combine marmalade and pecans; mix well. Fill center of apples with
marmalade mixture; sprinkle with cinnamon and nutmeg. Bake, uncovered,
at
350 degrees F. for 1 hour or until tender. Serves 6.
