Baked Ham and Apples
3 cups diced cooked ham
3 cooking apples, unpeeled and cut into wedges
1/2 cup firmly packed brown sugar
2 tbs all-purpose flour
2 tbs lemon juice
1 tbs prepared mustard
1 tsp grated orange rind
1 tbs chopped fresh parsley
Combine first 7 ingredients, mixing well. Spoon mixture into a 2-quart
casserole and cover with heavy duty plastic wrap. Microwave on high for 7
to 9 minutes or until apples are tender, stirring mixture after 4 minutes.
Sprinkle parsley over top. Serves 6.
