Shrimp and Apple Stir-fry


1 pound fresh or frozen shrimp
1/4 cup dry sherry
1/4 cup chicken broth
2t cornstarch
1T cooking oil
5 green onions chopped
1 cup seedless green grapes, halved
2 small red apples, sliced into thin wedges


Thaw shrimp if frozen. Halve the shrimp lengthwise. For sauce, stir together sherry, chicken broth, and cornstarch. Set aside. Preheat a wok or large skillet over high heat; add oil. Stir-fry onions in hot oil till tender then remove from wok. Add half the shrimp to hot wok. Stir fry 2-3 minutes or till shrimp turn pink. Remove from pan and repeat process with the remaining shrimp. Return all the shrimp to the wok. Push the shrimp from center of wok. Stir sauce; add to center of wok. Cook and stir till thickened. Cook and stir for 1 minute more. Return green onions; stir ingredients together to coat with sauce. Stir in apples and grapes. Cover and cook for 1 minute. Serve immediately. Makes 4 servings.
