As the 1963 slogan goes, "Things go better with Coke." Not only is it just a great beverage, but it also makes for a great ingredient in everything from cakes to roasts. Try out some of these recipies and report back to me the results. Coca-Cola Cake 1. 2 cups plain flour 2. 2 cups sugar 3. Mix together 4. 1 cup Coca-Cola 5. 2 sticks margerine 6. 2 tablespoons cocoa Bring to a boil, add the flour mixture and mix well. Add the blend: 1. 1/2 cup buttermilk 2. 1 teaspoon baking soda 3. 1 teaspoon vanilla 4. 1/2 teaspoon salt 5. 2 eggs Next fold in 1 1/2 cups miniature marshmallows. Bake in an oblong pan(9"x13") at 325 degrees F. for 30-35 minutes. Batter will be thin. TOPPING 1. 1 stick margarine 2. 7 tablespoons Coca-Cola 3. 2 teaspoons cocoa--Bring to a boil and add 1 box confectioners sugar and add 1 cup chopped almonds or pecans. Pour over cake while the mixture is still hot. Do not start making topping until the cake is out of the oven. Coca-Cola Icing 1. 2 cups icing sugar 2. 1/4 teaspoon butter (softened) 3. Coca-Cola Chuck all of the ingredients in a bowl and add Coke to get the right consistancy. (It does not matter if the Coke fizzes.) ....Thanks "agent hague" for this recipe! Coca-Cola Jello Get a package of Jell-O black cherry flavor. Substitute Coca-Cola for all the cold liquid and 1/2 the hot liquid. Don't boil the Coca-Cola. Add the rest of the hot liquid and follow the rest of the directions according to the package. Optional: Add your favorite topping such as Cool Whip Coca-Cola Duck Marinate duck breast in Coca-Cola for a minimium of 12 hours. The coke must be full strength with sugar and caffine. Slice breasts crosswise into strips 1/2" wide. Cover with a mixture of 1/2 flour, 1/2 cornmeal and adding salt and pepper to taste. Saute in 1" of hot peanut oil for a few minutes until medium rare or to suit taste. Serve as an appetizer with tabasco or other sauce and/or with a nip of jelly. Coca-Cola Roast 1. 2 pounds stew meat, chopped into bite size pieces 2. 1 onion, chopped 3. 10 oz bottle Coca-Cola 4. 14 oz bottle chili sauce 5. Worchester sauce to taste 6. Tabasco sauce to taste Cooking directions: Preheat oven to 325 degrees. In a little oil, brown the meat thoroughly. Drain the oil and place the meat into a baking dish. Add the onion. Pour a mixture of the Coca-Cola and the sauces over the meat. Cover and bake for 2 hours. Coca-Cola Nut Bread Cut up one package ( 8 oz.) pitted dates. Heat Coca-Cola to a boil. Remove from the heat and stir in the dates. Mix very well and stir in 1 cup of firmly packed light brown sugar and 2 tablespoons oil. Let cool while preparing the other ingredients. Sift together the following ingredients: 1. 2 cups all purpose flour 2. 1 teaspoon baking powder 3. 1 teaspoon soda. Add to the dates mixing thoroughly Stir in well beaten egg, 1 teaspoon vanilla and 1/12 cup chopped pecans Pour into greased and floured 9 x 5 x 3 " loaf pan Bake at 350 degrees F. for about 1 hour. Cool in the pan Set on rack for 20 minutes then remove from pan When cool, wrap and store overnight before slicing Coca-Cola Chiffon Pie 1/2 cup of sugar 1 Tablespoon unflavored gelatin 1/8 teaspoon salt. Stir in 1 cup of Coca-Cola. Beat 3 egg yolks Stir into Coca-Cola mixture. Cook over boiling water, stirring constantly, until gelatin is dissolved. Remove from heat. Stir in 1/4 cup fresh lime juice and 1/4 cup dark rum. Chill until mixture mounds when dropped from a spoon. Beat egg whites to form soft peaks. Slowly beat in 1/2 cup sugar, beating until stiff and glossy. Fold gelatin mixture into 1 cup whipped topping, then carefully fold this into the egg whites. Chill several minutes, then pile into one 9 inch graham cracker or baked pie shell. Chill several hours until firm. Top with a dollop of whipped topping, if desired, when served. Makes 6 - 8 servings.
