MONKEY BREAD
1/2 cup sugar
2 tablespoon cinnamon
1/2 cup brown sugar
5 tablespoons butter or margarine
2 tubs bisquits
Mix the sugar and 1 tbsp cinnamon together. cut the bisquits in quarters. Roll bisquits in the cinnamon/sugar mixture and place in angel food pan. Melt together: brown sugar, butter and 1 tbsp cinnamon and pour over top of bisquits. Bake at 350 degrees for 35 minutes.
I found this in my recipe box from my daughter Karen, 1987.
BANANA BREAD
4 bananas (very ripe)
1 cup sugar
3 eggs
2-2/3 cup flour
1-1/4 tsp baking soda
1-1/4 tsp baking powder
dash salt
1-1/2 cup chopped walnuts
Mash bananas with fork. Add remaining ingredients (nuts last) and stir until well blended. Lightly grease and flour pans (makes 2 loaf pans). Baker at 350 degrees 45-50 minutes.
BREAD STUFFING
First, prepare coarse or fine crumbs or cubs, as desired. (4 cups of crumbs for 1 quart of stuffing). Melt in large heavy skillet 1/3 cup butter. Add and cook until yellow (stirring occasionally): 1/4 cup finely minced onion. Stir in some bread crumbs. Heat, stirring to prevent excessive browning. Turn into deep bowl.
Mix in lightly: 1/2 cup chopped celery, 1 tsp dried sage or thyme, 1 tsp salt, 1/8 tsp pepper, poultry seasoning (to taste) and remaining crumbs.
For dry stuffing add little or no liquid. For moist stuffing, mix in lightly with fork just enough hot water or broth to moisten dry crumbs. Cool and place stuffing in bird.
