Christmas Recipes

And just what would the holidays be without the cookies, cakes, fudges, and candies of the season. Our family tradition was to start the baking as soon as the Thanksgiving turkey was consumed! We would make gift baskets for friends and family that were overflowing with Christmas cheer.

In keeping with that tradition, I have enclosed some of our all-time favorites here, including a few that have been handed down from generation to generation, like "Poor Man's Cake", which is a very dark spice cake that has cherries, dates and walnuts added to it during the holiday season. This recipe has been passed down for at least 6 generations. Its like nothing you can purchase in a store.

Mom liked cookies that you could sink your teeth into, so our Chocolate Chip Cookies have a little extra flour added to the original recipe to give a thicker, richer cookie.

Fudge was another staple of the season, with the smells of butters and sugars cooking to "soft ball stage". Both recipes here will melt in your mouth.

The "Filled Cookie" is another recipe with Pennsylvania Dutch heritage. We routinely used raisins and pineapples for our fillings, but this is one of those types of things that you can let your imagine soar.

And of course there is the "Pennsylvania Potato Candy". Can you guess where that came from? It is a very sweet, soft candy, which is to be kept cool until ready to serve. Don't let the potatoes fool you, it is a very tasty treat.
