Filled Cookies

Cream butter and sugar together. Add egg, milk, ½ cup flour, baking soda and vanilla. Mix well then add enough flour to make good cookies.

Roll out onto floured working surface and cut with round cookie cutter. (A drinking glass makes a great cookie cutter!)

Place on a cookie sheet and add 1 teaspoon filling (recipe below), and then cover with another cookie, pressing edges together to seal.

Bake at 375 degrees for about 15 minutes, or until golden brown.

Filling

1 cup fruit (can use raisins, banana pulp, or crushed pineapple for example)

½ cup water

½ cup sugar

Boil together and thicken with a little corn starch. Make ahead of time and allow to cool before filling cookies.
