Mash potato and put in a large mixing bowl. Add enough powdered sugar to stiffen. Roll out like pie dough , coating working area with powdered sugar.
Spread peanut butter on rolled dough to within ½ inch of edge.
Roll into a loaf, slice and refrigerate.
(Suggestion: To make this candy a little less sweet, add about ½ cup flour in place of some of the sugar.)
