Tamalyn's Favorite Recipes

I don't know about anyone else, but I think casseroles are the best thing since sliced bread.
I mean, you throw everything into a dish, bake it for awhile, add a salad and dessert, and TaDa...dinner is served.
These are a few of my favorites; let me know what you think.

Tater Tot Casserole
1 lb. ground beef
1 small chopped onion
1 can cream of mushroom soup
1/2 cup milk
2 cups frozen mixed vegetables
1 small bag frozen tater tots
salt & pepper to taste

Brown ground beef with onion; drain grease. In 8" casserole, combine soup and milk.
Add vegetables and beef. Top with tater tots.
Bake at temperature directed on tater tot package for 30 minutes or until tots are done.

Rice Casserole
1-1/4 cups white rice
1 lb. ground beef, cooked and drained
1 can French Onion Soup
1 can Consemme Soup
1 can Nacho Cheese Soup
1 cup of your favorite kind of shredded cheese for topping

In 2 quart covered casserole, combine all ingredients except cheese.
Bake at 350°F, covered for 50 minutes, or until rice is done. Top with cheese, bake uncovered another 10 minutes.

Ham & Potato Casserole
2 cups cooked, cubed ham
6-8 medium potatoes
2 cups shredded cheddar cheese
1 can cream of mushroom soup
1/2 soup can of milk

Peel potatoes and slice into thick rounds. Boil in salted water until almost done. Drain.
Combine soup and milk.
In casserole dish, layer half of potatoes, half of soup mixture, and half of cheese. Repeat.
Bake at 350°F for 45 minutes.

Darin's Favorite Salad
1 head of iceberg lettuce
4 green onions
1 can water chestnut slices
1 cup frozen peas, thawed by running under hot water in colander
1/2 cup shredded romano cheese
DRESSING: 1 to 1-1/2 cups Miracle Whip mixed with 2 to 3 Tbls. sugar

Peanut Butter Chocolate Chip Cookies
1 cup sugar
1 egg
1 cup crunchy peanut butter
1/2 cup chocolate chips

Mix well. Roll into balls. Place on cookie sheet & flatten. Bake at 350°F for 12 minutes.
