APPLE SAUCE

Wash, quarter and core 8 apples. Add only enouth water to steam apples and to prevent scorching. Add sugar to taste, but very sparingly. Too much sugar hides natural flavor and makes apples mushy. For smooth applesauce place in blender on low speed, or put through sieve. For chunky applesauce beat with fork. If preferred peel apples before cooking. Refrigerate until ready to use. (Do Not seal applesauce for storage that has been in blender. The air beaten into it will cause fermentation.)
