APPLE STRUDEL MUFFINS

APPLE STREUDEL MUFFINS 2 cups flour 1/2 cup sugar for batter 3 tsp. baking powder 1 tsp. salt 1/2 cup butter 2 tsp. grated lemon rind 1 egg 2/3 cup milk 1/4 cup chopped walnuts 2 Tbsp. sugar (for topping) 1 cup diced apple Bake at 425 degrees for 20 minutes Sift flour, sugar, baking powder and salt into large bowl. Cut in butter with pastry blender. Measure 1/2 cup for topping. Set aside. Stir apple and 1 tsp. lemon rind into mixture in bowl. Beat egg well, stir in milk. Add all at once to the apple mixture. Stir Lightly and spoon into muffin tins. Blend crumb mixture with 1 tsp. lemon rind, walnuts and the 2 Tbsp. sugar, sprinkle over muffin batter. Makes 12 muffins
