PAULY IS A FRIEND OF MINE THAT I CONSIDER FAMILY THAT HAS DEFINATELY GOT IT GOING ON WHEN IT COMES TO HIS SMOKER !!! AS YOU CAN TELL HE IS ALSO A BIG VIKING FAN SO I THOUGHT I WOULD TRY DO HIM SOME JUSTICE !!! BUT THIS PAGE COULD NOT DO ANY JUSTICE TO THE BRISKET I ATE THAT DAY !!! I COUDN'T STOP EATING HIS BRISKET !!! I JUST GORGED MYSELF INTO AN A OBLIVIAN TILL I THOUGHT I WAS GOING TO EXPLODE !!! TENDER AND JUICY !!! NOW HERES THE RECIPE !!!



12 POUND BRISKET
2 BOTTLES OF ITALIAN DRESSING
1/2 CUP LEMON JUICE
1/2 CUP LEA PERIN
2 CLOVES OF GARLIC
1/4 CUP OF SOY SAUCE

MARINATE BRISKET FOR AT LEAST 24 HOURS WITH ALL THE ABOVE INGREDIENTS !!! I CUT MY BRISKET IN HALF BEFORE MARINATING, AND SPLIT THE INGREDIENTS !!! PUT BOTH HALFS ON THE SMOKER FOR AN HOUR THE FLIP THEM FOR ANOTHER HOUR !!! WRAP THEM IN FOIL, SPLIT ALL OF THE MARINATE POURING IT OVER THE BRISKETS PUT ON THE SMOKER FOR ABOUT 18 HOURS AND PULL FROM THE SMOKER !!! I PREFER STUBBS BARBECUE SAUCE !!! I ALSO PREFER HICKORY FOR SMOKEING !!!



THIS BRISKET IS SO TENDER THAT IT IS ALSO GREAT FOR SANDWICHES WITH A LITTLE PICKLE AND ONION !!! A SPECIAL THANKS TO PAULY AND HIS FAMILY FOR TURNING ME ON TO THOSE GOOD EATS !!!
