SMOKED DRUNKEN CHICKEN

2 whole chicken fryer
louisiana cajun seasoning salt or any seasoned salt
1 12 pack of bud in a bottle (any brand)
2 ounce Zataran's crab boil
very little Liquid Smoke


Remove excess fat from chicken and rinse with cool water. Pat dry. Season chicken well inside and out. Open a bottle of beer, take a big swallow or pour out two ounces. Add liquid crab boil to beer. Separate skin from neck area by pushing finger between skin and meat. While holding pocket created open, pour beer into pocket. Do this in several areas. A large injection needle works well for doing this, holding a beer in one hand and a chicken in the other ! Place the chicken on the grill of your smoker.Go ahead and finish off your second cold beer ! Go back inside the house , and get a cheap bottle of wine out of the fridge !!! On your way back to the smoker get you a couple or three swallows of the Paul Mason! Then pour the rest of the wine ,and very little Liquid Smoke into the water pan ! then fill the rest of the pan with water ! Then go back for more beer !
Close the lid on the smoker and cook for about 4-5 hours or until juices run clear and chicken is done.

I PREFER HICKORY !!! BUT BY THE TIME ITS READY !!! IT WOULDN'T HAVE MATTERED IF YOU SMOKED IT WITH A TUMBLE WEED !!! MY FRIEND THATS GONNA BE SOME DAMN GOOD CHICKEN !!! ENJOY !!!
