Serves 4
Serve this salad as an accompaniment to all barbecued meats, fish and chicken.
Ingredients:
8oz. red kidny beans
pinch of baking of soda
1 clove of garlic, peeled and crushed
1 large onion, peeled
1tbsp. vinegar
3tbsp. salad oil
salt and pepper
Cooking Instructions:
Soak the beans overnight in cold water and the bicarbonate of soda
The following day transfer the beans and the liquid into a large saucepan
Add a quarter pint (125ml) cold water, bring to the boil and simmer gently for one and a half to two hours, making sure the beans do not break up
Drain and put into a basin
Cut off 2 slices of the onion for garnish and roughly chop the rest
Place the garlic into a bowl and add the vinegar, oil, salt and pepper
Mix well and pour over the hot beans before adding the chopped onions
When the dish has cooled a little garnish with onion rings
