DRYING
COCONUT
Choose fresh coconut that is heavy and full of milk.
Pierce
the eyes to remove the milk, then crack the hard,
outer
shell with a hammer. Remove the coconut meat,
discarding
the outer skin. Grate or thinly slice the meat.
Dry
until crisp.
