SHITAKE
MUSHROOMS- GENERAL INFORMATION
Many markets stock shitake mushrooms, fresh or dried.
Fresh
shitake mushrooms are intensely flavorful and
typically
high-priced. Dried shitake mushrooms have highly
concentrated
calories and minerals by weight, but because
of
their strong flavor they are used in much smaller
quantities.
They must soak before cooking.
