Special Coffees

Toffee Coffee................................................Italian Mocha Espresso
1 c. instant coffee........................................1/2 c. instant coffee
1 c. non-dairy creamer.................................1/2 c. sugar
1 c. brown sugar..........................................2 1/4 c. cocoa powder

Cafe' Vienna................................................Cafe' Orange Cappuccino
1 c. instant coffee........................................1 c. instant coffee
1 1/3 c. sugar.............................................1 1/2 c. sugar
1 1/3 c. nonfat dry milk................................2 c. nonfat dry milk
1 t. cinnamon.............................................1 t. dry orange peel

Cafe' Vienna Mix........................................Swiss Mocha
1 c. sugar..................................................1 c. instant coffee
2 t. cinnamon.............................................1 c. sugar
1 1/2 c. non-dairy creamer...........................2 c. nonfat dry milk
1 1/2 c. non-fat dry milk...............................4 t. cocoa powder
4 T. cocoa
1 c. instant coffee

Apple Juice Jigglers

Nonstick cooking spray...................3/4 cup water
1- 1/2 TBS. unflav. gelatin..............1 6-oz. can frozen apple juice concentrate

Very lightly coat a 9" x 5" loaf pan. Soften gelatin in water in a saucepan for 5 minutes. Heat over low heat, stirring constantly until gelatin dissolves. Remove from heat. Add frozen apple juice concentrate; mix well. Pour into pan. Cover and refrigerate. Chill until set, about 2-3 hours. Cut into one inch cubes and serve as a snack. (makes 45 cubes)

Crystal Light Punch

Three small tubs Crystal Light (lemon)...............1 1/2 gallons water
1 qt fresh strawberries, crushed.........................2 2 liter bottles 7up or sprite
1 large can crushed pineapple, juice and all

Mix everything together except the soda. Pour over ice made with 2 quarts water and 1 container Crystal light. Add Sprite or 7up when ready to serve..makes about 2 1/2 gallons....great for summer get togethers!

Espresso Smoothie

2 cups cold brewed espresso or double-strength coffee
1 pint coffee ice cream (or substitute chocolate for a mocha)
6 cups ice
1 1/2 cups milk

Blend espresso, ice cream, ice and milk in a blender until smooth. Pour into glasses. Serve with whipped cream, if desired.
