VEGETABLE RECIPES (2)
1 cup minute rice..............................1 can Campbell's onion soup
1 can Campbell's bouillon soup...........1/2 stick of margarine
Put all in a baking dish, stir, bake at 350 degrees for about 1 hour or until the liquid is absorbed.
Stir every once in a while baking. This is a great dish.
2 or 3 Zucchinis(depending on size)
1 large bottle of tomato/spaghetti sauce/Marinara Sauce
1 bag shredded Mozzarelli cheese..................1/2 cup olive oil
Oregano to taste...........................................Garlic (fresh/powder) to taste
Parmesean Cheese to taste
Heat oil in skillet. Slice zucchini into 1/2"sections(Do not peel) Saute until soft. Add olive oil in small increments, if necessary. After zucchini is cooked, take a 12X9X3 pan(or whatever pan you have.) Spray with PAM or take a little olive oil and spread it around the pan. Put a layer of sauce down, then a layer of zucchini, then parmesean cheese, oregano and garlic to taste, next add tomato sauce, and finally,mozzarelli cheese. Repeat the layering until the ingredients
are used up. Bake in 350 degrees Fahrenheit for 40 minutes or until cheese is bubbling. Serves 4 to 6.
375 g grated zucchini .....................3 rashers bacon, chopped
1 large onion, finely chopped ...........1 cup grated cheese
1 cup self raising flour .....................1/2 cup oil (I use light olive oil)
5 eggs .....................................salt and pepper(can be omitted for lower sodium)
Beat the eggs, add remaining ingredients. Grease a lasagne dish with cooking spray. Pour in mixture. Bake in a moderate oven for 30-40 minutes or until golden and eggs are set. The slice will settle as it cools. Serve hot or cold.
1 lb. tiny new red potatoes (or bite size chunks-peels on)
Cook til just tender, drain
1 pkt. Hidden Valley Ranch Dressing
Prepare the dressing according to the packet with milk and mayo and let thicken. Spray a casserole dish with non-stick spray such as PAM, mix dressing into potatoes, pour into dish, sprinkle with 1 tsp. paprika and 2 Tbsp. parmesan cheese. Bake at 375 for 15 minutes.
2 TBS olive oil....................................1 TBS thyme
1 TBS garlic, crushed.........................1 can tomato sause
1 large onion, chopped....................... 1 cup grated cheese(your choice)
4 chicken breast, de-boned.................Salt and pepper
5 cups zucchini, sliced thin
Saute the garlic and onions in oil. Add the chicken and cook until done. Add zucchini to skillet with chicken, salt and pepper, and add thyme. Stir all together, cover and cook until zucchini is tender. Then add your favorite tomato sauce. Place all of this in a shallow pan or broiler-proof dish, sprinkle with shredded cheese and broil until cheese is melted.
