Angel Biscuits

1/2 c. warm water
1 pkg. yeast
2 c. buttermilk
1 tsp. soda
1 c. Wesson oil
2 Tbsp. sugar
5 c. self-rising flour

Mix warm water and yeast. Combine flour, sugar, and soda; add oil. Add yeast mixture and buttermilk. Mix with a spoon or with hands until dough is formed. Knead on floured surface about a minute. Roll or pat out and cut. Bake at 375 for 15 - 20 minutes or until golden brown. May be baked at once or kept up to 2 weeks in refrigerator.

Banana Nut Bread

1/2 c. butter or margarine, softened
1 c. sugar
2 eggs
1/2 tsp. salt
1 c. mashed ripe bananas
1 tsp. lemon juice
2 c. all purpose flour
3 tsp. baking powder
1 c. chopped pecans

Mix together and pour into a greased and floured 1-pound loaf pan. Bake at 350 for 1 hour and 15 minutes.

Mexican Cornbread

1 1/2 c. cornmeal
1 tsp. salt
2/3 c. cooking oil
1 c. sour cream
1 can creamed corn
3 tsp. baking powder
2 eggs
2 chopped jalapeno peppers
2 Tbsp. chopped bell pepper
1 c. grated cheddar cheese

Mix cornmeal, salt, oil, corn, baking powder, eggs, jalapeno peppers, and bell peppers. Spread cheese over batter in pan, then pour remaining mixture over cheese. Bake at 350 for 45 minutes. Makes 8 - 10 servings.

Corn Bread

1/2 c. butter
1 c. self-rising corn meal
1/2 c. flour
1 egg, beaten
1 c. buttermilk

Melt butter in small cast iron skillet. Stir together well the corn meal, flour, egg and buttermilk and add the melted butter. Leave a small amount of butter in the bottom and along the sides of skillet. Pour mixture into heated skillet and bake at 350 for 25-30 minutes.

Hush Puppies

1 cup yellow corn meal
1 cup flour
2 tsp. salt
4 tsp. baking powder
1 cup milk
2 tbs. sugar
2 eggs
1 small chopped onion
1 Jalapeno pepper (finely Chopped)

Sift together all dry ingredients. Beat eggs separately & add to milk. Add milk mixture to dry ingredients. Add chopped onion & pepper. Drop by small spoonfuls into deep fat. Cook until they float to top. Dip out when they are browned.

Easy Corn Bread

1 Cup flour
1 Cup yellow corn meal
1 egg
1 cup milk
3 tsp. baking powder
2 tbs. oil
1 tsp. salt
2 tbs. sugar

Sift all dry ingredients together in a bowl. Add milk & oil. Beat eggs lightly & add to mixture. Pour into a greased & floured iron skillet. Bake at 450° for 30 minutes or until brown.
