Knockout Salad1 can (16oz) peas, chilled and drained
2 cups diced cheddar cheese
1/2 cup chopped sweet pickles
1/2 Bermuda onion. chopped
2 hard-boiled eggs, chilled and finely chopped
Salad dressing (Roquefort, French or mayo)
Place peas in a large salad bowl. Top with cheese, then pickles, followed by chopped onion.Sprinkle chopped eggs on top of onion layer. Just before serving,top with salad dressing of your choice and mix well.
Serves 4 to 6.
