SEDGEMOOR CAKES
  • SEDGEMOOR CAKES

  • makes about 12

  • Ingredients:

  • 275g plain flour
    pinch of salt
    125g butter
    125g caster sugar
    1/2 tsp cinnamon
    1/2 tsp mixed spice
    75g currants
    1 egg, size 3
    Caster sugar, to sprinkle

  • Method:

  • Preheat the oven to Mark 4 350F,

  • Sift together the flour and salt. Rub in the butter until the mixture resembles fine bread crumbs. Stir in the sugar, cinna mon, mixed spice and currants. Beat the egg with 1-2 tablespoon water and add to the dry ingredients. Turn the mixture out onto a floured board and knead gen tly until the dough comes together. Roll out to 1/2 inch thick ness. Using a 2 1/2 inch cutter, cut into 12 rounds. Place cakes onto a greased baking sheet.
    Cook for 20 min utes or until golden brown. . Transfer to a wire rack, sprinkle with caster sugar and then set aside to cool com pletely.
