Meat loaf


  • Serves 4

  • Ingredients


    500g./1lb. minced beef
    1 onion
    Salt and pepper
    1 egg
    2 slices bread
    1 tablespoon chopped parsley(optional)


    Method

    Light the oven, Gas 6,200'c. place the shelf just above the oven centre, grease a small loaf tin
    peel and chop the onion, wash and chop the parsley, grate the bread or make it into crumbs with a blender, beat the egg
    mix the mince, onion, parsley, salt and pepper, and breadcrumbs,
    Add the egg and bind the mixture together
    put it into the tin, cover with a butter paper or greased greaseproof paper,
    bake for about 50 minutes until cooked, to test, insert a skewer into the centre of the loaf and press the loaf gently the liquid that comes from the centre should not be pink
    turn the cooked loaf on to a flat serving dish, garnish with cooked vegetables such as carrots and peas,cabbage, and parsley: or serve it cold instead, with a salad.
