  • Chicken Minestrone

  • Ingredients

  • 30g butter
    500g chicken thigh fillets, chopped
    1 onion, sliced
    1 clove garlic, crushed
    2 bacon rashers chopped
    1 stick celery, chopped
    1 carrot, chopped
    410g. can tomatoes
    310g can red kidney beans, rinsed, drained
    3 cups water
    1small chicken stock cube crumbled
    ˝ cup small pasta
    2 tablespoons chopped fresh oregano
    1 tablespoon chopped fresh parsley


  • Method

  • Heat butter in pan, add chicken, onion, garlic and bacon.
    Cook, stirring, until chicken is almost cooked. Stir in celery and carrot, cook, stirring, 5 minutes.
    Stir in undrained crushed tomatoes, beans, water, stock cube and pasta. Bring to boil, simmer, uncovered,
    about 30 minutes or until minestrone is slightly thickened. Stir in herbs, simmer, un­covered, 5 minutes


  • Serves 4.
