Baked Black Pomfret ( Seafood )
Ingredients:
800 gms black pomfret fillet
50 ml orange juice
20 gms margarine
5-6 fresh basil leaves
2 tbsp olive oil
salt and pepper to taste
Method:
Mix salt, pepper, oil and 1 tbsp of juice. Marinate fish n this mixture for 30 minutes. Bake in a preheated oven at 250'C for 10 minutes. Meanwhile, boil the remaining orange juice with basil till it begins to thicken. Let it cool completely. Add margarine and simmer till a thick sauce forms. Place baked fisk on a serving dish and drizzle sauce over it. Serve hot, garnished with fresh basil.
