Festive Saffron Rice ( Rice / Indian )
Ingredients:
1 tbsp vegetable Ghee
2 tbsp sliced Almonds
1 tbsp raisins
1/4 tsp Saffron strands
1 tsp evaporated milk diluted in 1/4 cup Warm water
Sea salt to taste
1 cup Basmati rice
2 tsp Sugar
Method:
Melt ghee in asmall frying pan, add almonds and raisins and sauté over low heat for a few minutes. Reserve.
Combine saffron with the warm milk and let it soak for 10 minutes. Bring 2 cups of water and salt to a boil. Wash and drain rice well, then add to boiling water. Cover and reduce heat, cook for 7 minutes. Add saffron and milk to rice. Add sugar and stir gently. Continue to cook rice, covered, for 5 more minutes. Remove from heat and add the reserved nuts and raisins. Serve with a rich meat or vegetarian curry.
My boys (aged 6 and 2)love to eat it without any curry.
